Blanc – 30% Cinsault
– 13% Clairette and 2% various
other varieties (Syrah, Mourvèdre,
Carignan, Bourboulenc)
Vine age: 38 years
Harvest: by hand
Vinification: Crop intake at
15-16°C. Maceration on the skins
at 12-20°C in stainless-steel vats
(without starting fermentation).
Macerating vat bled into
débourbage vat to collect clear juice.
Pomace gently pressed (in
pneumatic press).
The juice is fermented in concrete
vats at low temperature (15-16°C)
Personality and ageing: enjoy ”on
the fruit“ within 3 years
asting temperature: 11-13°
C
